做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和(hé )薏米(mǐ )。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块在锅上(shàng )擦(cā )一遍,放两勺油,待(dài )油六(liù )成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调味即可品尝。
