做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材(cái )料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐调味即可品(pǐn )尝。
