做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一(yī )遍,放(fàng )两勺(sháo )油(yóu ),待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎(jiān )煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下(xià )盐(yán )调味即可品尝。
