做法(fǎ ):洗(xǐ )净(jìng )宰好鲫鱼(yú ),洗净淮山和薏米。用清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上(shàng )擦一遍,放两勺油,待油(yóu )六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个(gè )半(bàn )小时,下盐调味即可品尝。
