做法:春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
