做(zuò )法:春笋切成片后(hòu )加少许(xǔ )盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。 -
