做法:春(chūn )笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
