做(zuò )法:洗净宰(zǎi )好(hǎo )鲫鱼(yú ),洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅(guō ),用姜(jiāng )块在锅(guō )上擦(cā )一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火煲一个(gè )半(bàn )小时,下(xià )盐调味即可品尝。
