做(zuò )法:春笋切成(chéng )片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖(gài )大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
