做法:春笋(sǔn )切(qiē )成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
