做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈(chén )皮(pí )泡(pào )软,拍裂一小块姜,热锅,用姜块在锅上擦一(yī )遍(biàn ),放两(liǎng )勺(sháo )油,待(dài )油六成热(rè )下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好(hǎo )的鲫鱼和其他(tā )材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味即可品尝。
