做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清(qīng )水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在(zài )锅(guō )上擦一遍,放两(liǎng )勺(sháo )油(yóu ),待油六成热下鱼(yú ),煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时,下盐(yán )调味即可品尝(cháng )。
