做(zuò )法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在(zài )锅上(shàng )擦一遍,放(fàng )两勺油,待油六成(chéng )热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味(wèi )即可品尝。 -
