做法(fǎ ):春笋切(qiē )成片(piàn )后加少许盐捞出后用清水浸(jìn )泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
