做法:春笋切成(chéng )片后加少许盐(yán )捞出后用(yòng )清水浸泡(pào ),生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖(gài )上(shàng )锅盖焖。
