做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮(huái )山和薏米。用清水把陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两(liǎng )勺(sháo )油,待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材料(liào ),武火煮沸,转(zhuǎn )中小火煲(bāo )一(yī )个半小时,下盐调味即可品(pǐn )尝。
