做法:春笋(sǔn )切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
