做法(fǎ ):洗净(jìng )宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热(rè )锅,用姜块在锅(guō )上擦一遍,放两勺油,待油六成(chéng )热下鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼(yú )和其他材料,武火煮沸,转中小(xiǎo )火(huǒ )煲(bāo )一(yī )个半(bàn )小(xiǎo )时,下盐(yán )调味即可品尝。
