做法:洗净宰好(hǎo )鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一(yī )小块姜,热(rè )锅,用(yòng )姜块在锅上擦(cā )一遍,放两勺油(yóu ),待油六成热(rè )下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火(huǒ )煲一个半小时,下(xià )盐调(diào )味即可品尝。
