做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖(mèn )。
