做法:春(chūn )笋(sǔn )切成片后(hòu )加少许盐(yán )捞(lāo )出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
