做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和(hé )薏米。用清水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜块在(zài )锅上擦一遍,放(fàng )两勺油,待(dài )油六成热下(xià )鱼,煎至微黄(huáng )。煮沸(fèi )瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个半小时,下盐调味即可品尝。
