做法:春笋(sǔn )切(qiē )成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候(hòu )加入(rù )盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
