做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米(mǐ )。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软,拍(pāi )裂一小(xiǎo )块姜,热锅,用姜块在锅(guō )上擦一遍,放两勺油,待油六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和(hé )其(qí )他材料,武火煮沸,转中小火(huǒ )煲(bāo )一个半小时,下盐调味即可品尝。
