做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍,放两勺(sháo )油,待油(yóu )六成(chéng )热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮好的鲫鱼(yú )和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时,下(xià )盐(yán )调味即可品尝。
