做法:春笋切成片(piàn )后(hòu )加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
