做法:洗净宰好(hǎo )鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把(bǎ )陈皮(pí )泡软,拍(pāi )裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入(rù )煎(jiān )煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下盐调味即可(kě )品尝。
