做法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水(shuǐ )把(bǎ )陈皮泡软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用姜块在(zài )锅上擦一遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调(diào )味即(jí )可品尝。
