做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡(pào )软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一(yī )遍,放两勺(sháo )油,待油六(liù )成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其他(tā )材料,武火煮(zhǔ )沸,转中小火煲一个半(bàn )小时(shí ),下盐(yán )调(diào )味即(jí )可品(pǐn )尝。
