做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加(jiā )入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
