做法:春笋切成片后加少许盐(yán )捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入(rù )少量(liàng )清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
