做法(fǎ ):春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快(kuài )熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
