做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干(gàn )的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
