做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分(fèn )钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
