做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收汁时(shí )盖(gài )上锅盖焖。
