做法(fǎ ):洗净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水(shuǐ )把陈皮(pí )泡软,拍裂一小块姜,热(rè )锅,用姜块在(zài )锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸(fèi )瓦煲里(lǐ )的(de )清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小(xiǎo )时,下盐调味即可品尝。
