做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮(huái )山和(hé )薏米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时(shí ),下(xià )盐调味即可品尝。
