做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出(chū )后(hòu )用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再(zài )加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
