做法:春笋(sǔn )切(qiē )成片(piàn )后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
