做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油(yóu ),放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
