做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火煲一个半小时(shí ),下盐调(diào )味即可品尝。
