做法(fǎ ):春笋切成片(piàn )后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
