做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅(guō ),用姜(jiāng )块在(zài )锅上擦一遍,放两(liǎng )勺油,待(dài )油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火(huǒ )煲一个半小(xiǎo )时,下(xià )盐(yán )调味即可品尝。
