做法:春笋切成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火(huǒ )煮开后转中火。煮到水快(kuài )熬(áo )干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
