做法:春(chūn )笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时(shí )盖上(shàng )锅盖焖。
