做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大火煮开(kāi )后(hòu )转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
