做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜,热(rè )锅(guō ),用姜块在锅上擦一遍,放两勺油(yóu ),待(dài )油六成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其他(tā )材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时(shí ),下盐调味即可品尝。 -
