做法:春笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅(guō )盖大(dà )火煮开后转(zhuǎn )中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅(guō )盖焖。
