做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开(kāi )后(hòu )转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀(yún )稍(shāo )收汁(zhī )时盖上锅盖焖。
