做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小(xiǎo )火(huǒ )煲一(yī )个半小时,下盐调味即可品尝。
